Anthony, I'd be surprised if you're able to get any realistic, real world data from the specialized multimedia schools : it's in their interest to make it look like 95% of their students get work in the CGI, movies or game biz :)

@Andy: someone asked this before, the answer I gave is that it's kind of like trying to get statistical data on anarchists. they're too spread out decentralized and always moving around to pin any numbers on, and even if you did they'd have a huge margin of error

As for demand itself I think you will have to hunt through the job sites for various companies to get a decent list.

In some of the Gamasutra post-mortems they list the team breakdowns based on roles. You might get some basic information from there to assist you in what you are after. As for demand itself I think you will have to hunt through the job sites for various companies to get a decent list.

Really good expereicned artists are always in extrememly high demand. I get emails all the time from my friends asking if I know anyone I would recommend. The bad news is that artists in general are not in great demand.. for every open slot, there are probably 100 applicants. I know that we have on our website a statement that we are not hiring, and I still get 3-5 resumes a week.
Companies are always looking.. but they are always short of people who really know what they are doing. they are not looking for those starting out.. they are looking for those who are proven performers.
hope this helps...
