Tunnels/caves underwater

Bit of advice please! I need to create a number of underwater caves/tunnels. How would people recommend I approach this? I have access to 3DS max or constructor. I think my main worry is reading about the concerns of producing "concave" meshes.

I would recommend either sectioned and stacked DIF "interiors" with DTS "detail shapes" for realism . . .

. . . or DTS objects with some good collision box implementation.
