Hi, I am curious what type of server would be good for online games.
would this server (the first one) be a good server: http://h10010.www1.hp.com/wwpc/us/en/ss/WF04a/15351-15351-241434-241646-3328424.html
Also would it be Linux or Windows

It is an EXTREMELY difficult question to answer without any specifics.

It depends on a number of factors, including whether there would be database requirements, how robust the database requirements and connection speeds are, the network infrastructure that you are utilizing, how your server is setup, etc. And the Windows/Linux question is also dependent on support from your technical staff to tweak the systems. Do they know both intimately? Would they be able to tweak the configuration for performance or are they a "default install and run" house? It is an EXTREMELY difficult question to answer without any specifics.

I remember back in about 2002, i was a guide in Everquest. During one of the patches for an expansion, they explained the length of the downtime by revealing that things were taking so long, because the 45 EQ servers were actually over 1000 individual "Boxes".
A "server" isnt' always just one peice of hardware.

If your client and server code runs on MacOS or Linux then you could use one of those otherwise it's a windows server. Then you might have a RDBMS like mysql, Oracle etc on the backend so you might want an instance or a dedicated server for that.
I think when the new Torque MMO kits come out some server company should come in an offer some hosting solutions that can scale.
That's the fantasy anyway. There is a huge market for the Battlefield type of shooter servers just need them to be interested in providing online hosting to indies.
