Changing Fonts in GUI

How do I do that ? By creating a new profile ?
What fonts may I use ? What happens if the user doesn't have the font I specified ?
Is there a comprehensive GUI resource/refference/tutorial (couldn't find it ) ?

Jason I'm not too sure about that. The GFT and UFT formats are not exactly open, or widespread enough where the average Joe can load it into a word processing application and publish a novel. And as you say, if you don't have rights to it you can always make bitmap fonts out of it :p

Look a day or so back in this Forum for "Text Colour In GUI Editor". It mentioned new fonts, colors, and new profiles.

You can specify any font YOU have installed on your system.
Torque converts your font into either a GFT or UFT file in the /gui/cache directory, so your customer does not need to have the font installed.
MAKE SURE YOU HAVE THE RIGHTS TO USE AND REDISTRIBUTE FONTS THAT YOU USE. Sorry for the screaming, but this is a big point that some people overlook. Most TrueType fonts are licensed for use for you make "published" works with, meaning you can make pictures of the fonts, but you cannot distribute a font in a way that someone else can reuse to make their own "published" works.
