Fixed Fake GUI to the screen, disable Camera Movements

Hi,
I was wondering If it was possible to disable camera movement for some parts of the assets I add on the scene.
My problem is that a part of the screen in my game is like a giant GUI, but not created as a GUI, because there is many features (animations, camera shake...) that I want to keep, but not seeing affected by camera moves. Maybe some behaviors can do that ?...
I guess I'm not explaining very well so here's some screens.

The red lines are the limits of what is display on our screens. The gray thing is the "fake GUI" there is above.
It's some kind of a 2Dshooter-view game, the green point is our spaceship, and under there is the scrolling of the map with planets. Or the camera movement, this is where I'm not sure how to do it (scroll? camera ?..)

By the way, isn't there any anti-alias function for the text objects we add on the scene ?
Thanks for your replies (and sorry for my bad english ^^")
