Okay, I really need some help with my models

So I've been stuck for a while thanks to real life stuff keeping me from both my projects. I haven't even been able to complete my main character model for one of my projects but that's mostly due to the fact that when it comes to the artistic side I'm not as skilled as others. In fact I stink.... or so I think even though some say I'm not bad. Point is I could use some help. I need pointers on how to do a few things.

1.) My model is essentially complete. Now I need to map him out. I've read a few tutorials and learned of several ways. But I would like it if someone either explained it all out or hooked me up with a link to a really really good tutorial. Because from what I've done so far it's not the greatest.

2.) I need help with animation. I've added a biped to my model and set it as the models bones. It works for the most part... however, there are sections (lets say the head which is a gas mask) that has parts the screw up when the bones move. Even the arms have unrealistic movement when the bones are moved.

So to make it simple, I have a character model I have completed that can't be used for my game because I can't animate it or texture it. So any help or links or anything I can get would be greatly appreciated.
